Danish aebleskivers

This week was very busy with much food and fun in addition to our regular assignments for SUV and Institute.  Food and fun equal much hard work as well. The elders came for dinner Monday night, and as you can tell by the very clean plates above, everything was eaten.  We fixed baked chicken, mashed potatoes, gravy, vegetables, rolls - like a regular Sunday dinner back home, and they loved it.  We also had a danish cake for dessert.  (The dessert and rolls disappeared after the picture was taken.)  We love these young men and are amazed at the good things they are doing.

We also celebrated an early Thanksgiving with all missionaries serving on the Jutland Peninsula.  I am sorry that we were so busy at the time of the meal that we forgot to take pictures of everything.  Just picture Aspen Grove with buffet tables, missionaries balancing plates heaped with food and dripping gravy,  traffic flow of course, and plenty of food devoured in 45 minutes!  The missionaries were very appreciative and did most of the dishes afterwards.

Elder Parker and I ended the week making Danish aebleskivers with fresh apple fillings.  They are a cross between round/ball pancakes and donuts made on top of the stove.  They were great, but we decided that next time we will use the aebleskiver recipe and fry them as big pancakes sprinkled with fresh apples, and that will go quicker!  Of course I loved the sprinkling of powdered sugar, and Dad poured maple syrup over everything.  Mapleline was the one food item I made room for in my carry-on as we had been told it was hard to find in Denmark.  Dad has to have his home-made syrup...
